Chicken Napoleons & Pasta alla Vodka


My husband has had a four day weekend and we've been enjoying it. We've been getting a lot of things done around the house, visiting with family and just relaxing. It's been wonderful. I decided it was also the perfect opportunity to try out two new recipes on him. Friday night, I made these fabulous Grilled Chicken and Avocado Napoleons using Giada's recipe. YUM. Talk about a quick, but super yummy and light meal to make. We LOVED the flakiness of the puff pastry and just the overall combo of flavors. The avocado we got was perfectly delicious. Definitely going on the rotation list. Then last night, I decided to try out Pioneer Woman's Pasta alla Vodka. She wasn't kidding when she said to just eat it out of the serving bowl. That sauce - oh my yum - that sauce is fantastic! It leaves such a great aftertaste in your mouth. This was another crazy easy dish to put together, but would seriously impress company if you had them over for dinner. Great thing is, it made a lot and we are going to enjoy the leftovers again today. WooHoo!!! I'll be back tomorrow with a Jacksonbelle Embellishments Tuesday Challenge. OOOOO, I am sooo glad you tried that pasta, I have been wanting to, looks delish, now that I have your opinion I will make sure to add it to my list ;)
