Pineapple & Coconut Chicken Curry


Have I mentioned that I love Tasty Kitchen? Well I do. I've been saving and trying out new recipes like crazy. The other night I made Pineapple & Coconut Chicken Curry. Mmmm, I would eat it again today if I had the ingredients to make it. Ross went crazy over it and said it reminded him of a soup he orders at FireBowl. Wait until you taste the coconut milk, curry and ginger together. It's a fabulous flavor combo. Now I have a heat issue. I can't have things too spicy because my lips break out in an allergic reaction. So I just used regular ol' curry powder and let Ross add his own heat with some Sarachi sauce. I also added some little broccoli florets which worked perfectly because the sauce coated ever little bit. You can find the Rice Noodles on the International asile of the grocery store with all of the Asian products. They cook super fast and were perfect with this dish.

Yum! Looks delish! We just had homemade tamales last night, no I didn't make them, lol, a friend of my MIL's did, they were so good! Have a great weekend!
