Moist Carrot Cake


I always make a carrot cake in Spring, especially around Easter. It's one of the few cakes that I actually like. I love the pineapples chunks, raisins and nuts in it. I found this recipe from Taste of Homes for a Makeover Moist Carrot Cake and decided to give it a try. It's definitely a keeper!! The cake was extremely moist and tasty. I loved making it in a fluted pan because every single slice had just the right amount of cake with icing. And that icing was fabulous!!! I loved the little crunch the walnuts gave to the top!
