Frito Pie

Happy Cinco de Mayo! I did make a card today, but I can't share it just quite yet. So I decided to share a recipe instead. Did y'all make any yummy Mexican food today? I decided to make this for dinner and Ross was eating the meat mixture straight out of the skillet, LOL. It makes a lot too so he can enjoy some leftovers this week. I just served it with some sliced mangos.

Frito Pie

Brown:
1 chopped onion
1 lb. ground turkey

Add:
1 can tomato sauce
1 can tomato paste
3 cans water (use the paste can)
1 tsp. Accent
1 tsp. chili powder
1 tsp. oregano
1 tsp. cumin seed
1 tsp. salt
2 Tbsp. sugar
2 cloves garlic, minced

Simmer for 10 minutes. Add 1 c. cooked rice.

Prepare topping ingredients:
1 large pkg. Fritos
2 avocados, chopped
3 green onions, chopped
2 tomatoes, chopped
ripe black olives, slices
lettuce, chopped
cheese, grated

Girl! I am embarassed! Your frito pie rocks!!! I open a can of chili and dump it on a plate of fritos!!! To get fancy I add a little dallop of sour cream!

This recipe sounds "to die for!" I might have to try it! I am a sucker for Mexican food. LOVE it!
