Just wanted to wish everyone a happy New Year!!!!! Hope y'all have a great celebration tonight and a wonderful 2008 full of many blessings. My parents came into town yesterday. Tonight we will nibble on appetizers, play games and wait until midnight to pop open some bubbly. I wanted to share 2 of my favorite appetizers that I will be making for tonight:
Sausage Balls
1 lb. Sausage ( I use sweet Italian turkey)
8 oz. grated cheddar cheese
1/2 to 3/4 cups biscuit mix (Bisquik or Pioneer baking
mix, etc.)
Mix together sausage and cheese. Gradually add biscuit mix. Do not make too stiff. Form into balls
about 1". Bake at 325 for 25-30 min. until lightly brown.
Spinach Tortilla Pinwheels
4 large tortillas (I get the garlic/herb tortillas)
2 (8oz.) pcks. cream cheese
mayonnaise
frozen chopped spinach, thawed
dash of garlic powder
dash of dill
Mix the cream cheese and spinach together. Add enough mayonnaise to make it smooth. Add the garlic powder and dill. Spread even, thin layer over tortilla. Roll up tightly. Cover and chill for at least 2 hours. Slice up and enjoy!
