Happy 2008!!! I hope everyone had a wonderful celebration last night. We ate those yummy appetizers, played Taboo for a few hours, and then welcomed in the new year. It was a lot of fun. Today we woke up to watch the Rose Parade and I'm working on making lunch. We are having chicken enchiladas and I had to find a way to incorporate a blackeye pea dish because my mom always says that you have to eat some on Jan. 1st for good luck throughout the year. I ended up using this Blackeye Peas Salad recipe. Seems more like a salsa which is good because Ross isn't a huge fan of blackeye peas! After lunch we are going to start a game of Canasta. I hope everyone is having a wonderful and relaxing day off!!! Hugs.
