Garlic-Basil Tortellini Soup

Another reason I love Fall is because it is soup season. Granted it was 73˚ today and I was in short sleeves and flip flops..it's still November and I should be able to eat soup. This is one of our favorites. It quick and easy to whip together for a busy day and it's really filling. Enjoy!

Garlic-Basil Tortellini Soup

2 garlic cloves, minced
1 tsp. butter
2 cans chicken broth
1/2 c. water
1/3 c. minced fresh basil
1/4 tsp. pepper
2 1/2 c. cheese tortellini
1 can cannellini beans, drained and rinsed
2 Tbsp. balsamic vinegar
1/4 c. shredded Parmesan cheese

In a large saucepan, saute garlic in butter until tender. Stir in the broth, water, basil and pepper. Bring to a boil. Stir in tortellini. Reduce heat; simmer, uncovered for about 3 minutes or until tortellini begins to float. Stir in beans and vinegar; heat through. Sprinkle with Parmesan cheese.

*when I have it on hand, I always add some chopped shallots in with the garlic.

MMM this sounds delicious...after being sick these past two weeks I am ready for something OTHER THAN chicken noodle soup! LOL

sounds yummy! I'll have to give it a whirl, we get cold weather in Indiana A LOT so it's always good to have plenty of yummy warming soup recipes! :)
