Tomato Garden Pasta

We had a lot of tomatoes from the garden this week, so I wanted to try out a new recipe that would use some of them up!!! This is what I found. It was super easy to make and I love the fresh green beans and feta in it!! We also used fresh garlic chives from our herb garden. Yum!

Tomato Garden Pasta

5 c. uncooked bow tie pasta
1/2 lb. fresh green beans, trimmed and cut into 1” pieces.
2 Tbsp. olive oil
2 Tbsp. balamic vinegar
1 tsp. salt
1/4 tsp. pepper
1 1/2 lbs, tomatoes, seeded and chopped
2 garlic cloves, minced
2 Tbsp. minced chives
4 1/2 tsp. minced fresh basil
1/2 c. crumbled feta cheese

Cook pasta according to package directions, adding beans during the last 5-6 minutes. Meanwhile, in a large bowl, whisk the oil, vinegar, salt and pepper. Stir in the tomatoes, garlic, chives, and basil. Drain pasta mixture and add to tomato mixture; toss to coat. Serve warm or at room temperature. Sprinkle with cheese just before serving.

* You can also add cubed grilled chicken breast.
