Peanut-Crusted Chicken with Snap Peas
Have y'all tried any new recipes lately? The other night I made Peanut-Crusted Chicken. It's a recipe from the Light & Tasty magazine. This is a great recipe that is easy, but will impress a crowd. The marinade was fabulous and made the chicken super tasty and juicy. We both loved the texture and crunch the peanuts and Panko crumbs added to the outside. I even made an extra chicken for us to nibble on the next day. We sliced it up and Ross rolled his up in a tortilla with some lettuce and extra fixings. I bet this would taste great on top of a salad as well. I also made Orange Glazed Sugar Snap Peas. YUM! The dressing was fabulous, light and paired perfectly with the chicken.
Orange Glazed Sugar Snap Peas:
1/2 c. orange juice
2 Tbsp. brown sugar
1 Tbsp. butter
2 tsp. grated orange peel
1/2 tsp. salt
3 c. fresh sugar snap peas, ends trimmed
1 Tbsp. sugar snap peas
minced fresh mint to taste
In a small saucepan, combine the first 5 ingredients; bring to a boil. Reduce heat; simmer, uncovered, until mixture is reduce by half. Saute sugar snap peas in a small skillet with 1 Tbsp. extra virgin olive oil. Peas will turn crisp and bright green after 3-5 minutes. Plate peas and spoon orange mixture on top. Mix to coat well. Garnish with freshly minced mint.

Yeah! I was wondering when you would post another delish recipe! I think this is one my 11 year old will love.
Those peas look yummy! I just bought a 2 pound bag of sugar snap peas - I've been eating them raw, but I may have to try this recipe :)
