Got Squash?


This was our first time planting squash and I gotta say it's the easiest vegetable ever. It popped up quickly, immediately started blooming and we've had an abundance of squash weekly. We planted all 7 pots thinking they wouldn't all survive. Ha - all 7 look just like this! Have you ever felt a squash leaf? They are fuzzy and really soft. I always give them a little rub when I'm out there watering. I also love the big yellow blooms. They only open up in the morning, but they make the garden look so bright and colorful. Needless to say, I've been hunting down squash recipes like a madwoman. We've already steamed it and last week I made squash patties. However, the other day I tried this recipe for Chicken Squash Bake and it definitely hit the jackpot. The flavors were so fresh and blended perfectly. It felt like a wonderful country summer dinner. It was super easy to make, but would surely impress guests. Click on the link and take a look at her pictures. They are definitely better than the one I took. I always plant squash but my plants don't look like yours yet! They really are easy to grow and the yield is huge!! I can't wait to see what interesting recipes you come up with.

One of our new favorite ways to eat squash is to cut it into chunks and grill it in a basket. When it's done, pour salsa on top and add shredded cheese. Easy and YUM-O!! :)

Woohoo your plants look great, look at all of them! I myself am not a squash person. ;) Don't forget that one cooking show starts tonight...maybe they'll do something wish squash!! :)

Looks great! Our squash died because the household gardener (who just HAPPENS to hate squash) "forgot" to water them. :) our tomatoes, on the other hand, are growing like crazy. In another week we'll have more than we could eat in two lifetimes!
