Oatmeal Cranberry White Chocolate Chip Cookies

Can I hear a YUM!!! Today is definately a bright, sunshiny day here. It is gorgeous outside and it was actually cool this morning. WooHoo!! We will see how fast it warms up now that the sun is fully out. Tomorrow is stamp club and guess who the hostess with the mostest is...Me! We have so much fun every month. We usually do 3-4 cards/projects in the morning and then break for lunch and do 2 cards in the afternoon. We just have a great time trying out new techniques and giggling. Anyhow, the hostess for the month is in charge of providing lunch and I always try out a new cookie recipe on the girls and since I've been in a cranberry mood lately, I found this one. It sure is yummy (I had to taste it ya know) and it was sooooo quick and easy to make.

Oatmeal Cranberry White Chocolate Chip Cookies


2/3 c. margarine, softened
2/3 c. brown sugar
2 eggs
1 1/2 c. old fashioned oats
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
6 oz. pkg. dried cranberries
2/3 c. white chocolate chips

Preheat oven to 375˚. Beat margarine and brown sugar together until light and fluffy. Add eggs, mixing well. In a separate bowl, combine oats, flour, baking soda, and salt. Add to butter mixture in several additions, mixing well after each addition. Stir in dried cranberries and white chocolate chips. Drop by rounded tsp. onto an ungreased cookie sheet. Bake for 10-12 minutes and cool on wire racks.

* It made 31 cookies.
