Lemon Linguine

Can I get a YUM! Ross was seriously licking the plate last night. I tried this new recipe and it is definately a keeper; super easy to make too!!!

Lemon Linguine

8 oz. package linguine
1/4 c. minced shallot
2 cloves garlic, minced
1 package baby bellas, sliced
1 Tbsp. butter, melted
8 oz. carton sour cream
4 Tbsp. shredded Parmesan, divided
1 Tbsp. milk
1 1/2 tsp. lemon pepper seasoning
1/4 tsp. salt
1 Tbsp. fresh lemon juice
2 Tbsp. chopped parsley

Cook linguini according to package directions. In a skillet, melt butter and saute the shallot, garlic and mushrooms until tender. Stir in sour cream, 2 Tbsp. Parmesan, milk, lemon pepper, salt and lemon juice. Cook for about 1 minute. Remove from heat and pour over cooked linguine. Add parsley and gently toss to coat. Top with remaining Parmesan.

* This would also be great if you added some grilled shrimp or sliced baked lemon pepper chicken on the top.
